It's easy to customize the acknowledgement that employees are actually signing when they sign your handbook.

In the editor, click the "Acknowledgement" icon in the nav on the left side of your screen:

Click it!

Once there, you can edit the text like you would any other section of your handbook. Changes are saved automatically.
